Prepared by salting and flavoring the pork belly with spices (black pepper, fennel seeds, rosemary, or chilli), and rolling it on itself
Can be kept at a temperature not exceeding 7°C wrapped in a damp cloth for up to 6 months
It is eaten sliced to fill sandwiches or as an accompaniment to focaccia and wraps
It can also be served roasted or used in the preparation of fish dishes such as prawns or chicken legs
Excellent for adding flavor to soups and minestrone
