Winemaking Process
– Harvesting: Manual selection of grapes
– Fermentation: Grapes are de-stemmed and crushed, then left to macerate for about 10–15 days in concrete tanks. During this period, pumping over and delestage techniques are employed to enhance oxygenation and extract colour and tannins.
– Aging: The wine is aged in stainless steel tanks for 9 months, followed by additional aging in the bottle before release.
