Fregula Sarda, also known as Fregola, is the iconic durum wheat semolina pasta from Sardinia.
Fregula Sarda is similar to cous-cous (from which it derives) and consists of tiny rolled balls with a unique flavour.
As for the way it can be served, it really has a lot of versatility.
Ideal for giving substance to meat or fish broths as well as first courses, both cold and hot.
Great when combined with vegetables and fresh herbs as a side dish or light meal, but equally delicious on its own, served simply with olive oil, sea salt and a maybe a dusting of Ricotta Salata cheese.
