The pitted Taggiasca olives in extra virgin olive oil are first selected and pickled, then pitted and jarred in extra virgin olive oil. Taggiasca is a small olive that contains a high percentage of oil. It is very tasty and the salting gives greater consistency, fragrance and fleshiness to the fruits. Remaining in oil, the flavour is diluted and sweetened. Excellent for an aperitif, to season pasta dishes and game or on fish.
