Grape : Chardonnay
Barberino Tavarelle. The Chardonnay “Fabrizio Bianchi” by Castello di Monsanto borns in the ’80s thanks to the tenacity and passion of the producer Fabrizio Bianchi, moved by the idea of creating a white wine of great character, in a territory definitely atypical for this variety. Inspired by the great white wines of Burgundy, two thirds of the grapes are vinified in steel vats at controlled temperature, the remaining part in French oak “tonneaux” where it remains on the lees for about 6/7 months.
Food pairing: This wine pairs especially well with fish or vegetable-based dishes and is a definite must-try with tuna and bell pepper risotto.
